Sweet Korean BBQ Beef



This is my very sweet, very puffy faced 7-year-old son.  A few weeks ago, I learned something new about Jones Child #5….he is highly allergic to kitty cats.  After loving on a friend’s cat, he looked like this for days.  He was so miserable and barely half conscious from the amounts of children’s allergy medication he had to take.  My poor little guy was in tears much of the time, but not because of how much his eyes hurt or because he couldn’t keep them open without using his fingers, but because he understood that he would have to keep his distance from Rascal the Cat from now on.
IMG_7419Of course, my fellow Mamas out there understand what these days of a swollen child were like for me.  When your kiddos are sick or otherwise afflicted, everything else in your life comes to a screeching halt.  Work deadline?  Another child’s volleyball game?  Church responsibilities?  Mountain of dirty laundry?  Kiss them all goodbye because little ones only want love and attention from Mom when life isn’t quite right.  Dads and older siblings are good for playing games and wrestling on the living room floor, but only Mom will fill the prescription for love, snuggles and attention.

Luckily for me, during this kitty cat allergy crisis, I was in the midst of trying out Campbell’s Slow Cooker Sauces for the first time.  Apparently, Campbell’s has impeccable timing as well as great products because this Sweet Korean BBQ Beef honestly took me less than 5 minutes to prep in the crock pot.  I just tossed in the beef chuck roast into the slow cooker, added the sauce….DONE!  Back to the couch to snuggle with my puffy boy and to endure endless amounts of annoying kids shows.

This was the first time I had ever tried Campbell’s Slow Cooker Sauces and was so excited to see the Sweet Korean BBQ because that flavor profile is one of my all time favorites!  There were quite a few flavor varieties to choose from at my local store but I was pumped to give this one a try.

There are also a couple different timing options for this recipe, which gives you some great flexibility in your dinner prep.  You can either cook the beef on low for 7-8 hours if you are going to be gone all day, or on high for 4-5 hours.  No matter which timing you choose, your house will smell like a Korean food truck has parked outside your house 🙂  Yum!

    One of the easiest is chicken breasts with bbq sauce. Yummy too!:) I love your blog by the way, you rock! And I hope your baby feels better. I have 4 of my own, 5 including hubby.:) It ain’t for sissy’s! You’re doing a great job though!! 🙂

    My favorite Crock pot meal is Pulled Chicken Sandwiches. Just throw in chicken breasts with my homemade sauce and the chicken stews in it and I pull the chicken to pieces and serve it on Toasted buns with coleslaw! Yummy!

    I LOVE the crockpot. I’m a dietetic intern and many times I offer crockpot suggestions for clients who say they don’t have time to cook! Super easy and convenient. Personally I like making heart chicken dishes – chicken with potatoes and carrots, barbecue chicken, etc.

    I found a lovely but simple chicken recipe on the Le Creuset website that works either in a Dutch oven or a slow cooker. It’s called Walnut Creek Chicken, and it’s basically chicken thighs simmered in a spiced tomato sauce. Easy peasy, and delicious. Just add rice and a salad. My new go-to meal for those crazy-life times!

    My “go to” slow cooker meal is rubbing a pork butt/shoulder down with BBQ seasoning and brown sugar, throwing it in the slow cooker with about 8 oz of water and a cut up onion and setting it to low. 8 hours later ou have some of the best BBQ Pulled Pork ever.

    Love to make beef tips/stew meat with brown gravy, mushrooms, onion soup mix and a little water to get it all started. Leave it to slow cook all day and its fabulous! Serve with mashed potatoes or noodles. Definitely comfort food.

    I like to make easy Pulled Pork sandwiches. All I do is throw in the pork with sauce and it comes out so good, and I put it on crusty french rolls and serve with cole slaw!

    My favorite to make in a pinch is BBQ pulled pork. I take a pork butt or shoulder, rub it down with BBQ seasoning and brown sugar and then put it in the crock pot with a quartered onion and enough water to almost cover it. Set it on low for the day and about an hour before serving you can drain it a bit, pull out any bones (and onions if you want) and then mix in your favorite BBQ sauce…then set to low until ready to eat.

    I would use these sauces for a weekday crock pot meal.  I actually have two of them at home waiting to be used!  Great recipe!
