We were on the hunt for an easy recipe the kids could make for Father’s Day when I came across this brown butter rice crispy treats recipe from Female Foodie. Rice crispy treats are one of most favorite quick treats and I knew these would be a home run just because of how much I love brown butter in baked goods!
What is Browned Butter?
Simply, browned butter is cooked until the milk solids turn brown. Some of the water also evaporates during this process. To do this, simply add butter to a pan over high heat, allow it to melt, foam up, spatter a bit, and turn brown, all while stirring.
Brown butter acquires a deep caramel, nutty flavor, which makes it perfect for sweet treats but can also make savory foods and sauces so much richer in taste. Personally, I like using salted butter to make it because it creates a natural salted caramel flavor before adding any sugar.
How to Make Thick Rice Krispie Treats
The answer is simple: use a lot of ingredients and a deep 9×13 inch pan. I use two 10-ounce bags of marshmallows and a full 12-ounce box of rice krispies for thick treats. You will also need to press them down firmly into the pan to make them fit!
These easy bars have a deep salted caramel flavor from the brown butter and the little bits of butterscotch are pure heaven!

Ingredients

3/4 cup salted butter
2 (10-ounce) bag mini marshmallows
1 (12-ounce) box rice crispy cereal
2/3 cup butterscotch chips
1 teaspoon coarse kosher salt
Instructions
Heat butter in a large pan over high heat. Allow it to melt then keep stirring as it foams and the butter begins to brown. Once the butter becomes deep brown in color, remove it from the heat and add the marshmallows. Stir until they melt.
In a very large bowl, mix together the cereal, chips, and salt. Add the melted marshmallows. Stir well to fully combine.
Place mixture into a greased 9×13 inch pan and press down. Allow to cool before cutting.
