Peanut Butter Oatmeal Bars are no bake, which means they are a quick and easy bar recipe for the kids lunches, potluck or office party? These bars are exactly what you are looking for! Loaded with oats, peanut butter and melted chocolate….sounds about like the best stuff, huh?
Now that it is officially November, my mind has officially started dreaming about Thanksgiving pies, Christmas cookies and all the extra weight I will gain from devouring all of those yummy treats. I am convinced that Andy Williams was singing all about the holiday food when he recorded “It’s the Most Wonderful Time of the Year”
These bars were my salvation when all that dreaming lead to a major craving! I was short on time, so the no-bake part was perfect, and I love that they are gluten free since my tummy isn’t such a fan of wheat now that I am over the age of 40. I lined my pan with nonstick parchment paper so when they had cooled, it was super easy to just grab the paper, pull out the bars and cut them with a knife.

Spray a 9 inch square pan with non-stick spray and set aside
In a medium sauce pan, melt the butter over medium high heat, then add the sugar, milk and peanut butter. Mix to combine and then allow the mixture to come to a boil. As soon as the mixture begins to boil all around the edges of the pan, set the timer for 4 minutes.
After the four minutes are up, remove from the heat then add the vanilla and oats. Mix to completely combine. Pour the mixture into your pan and evenly spread. Immediately top with the chocolate chips and let them sit for about 5 minutes so they will melt, then use a knife to evenly spread the melted chocolate over the bars. Allow the bars to cool completely before cutting.
