Parfaits are a great dessert option when you are trying to eat healthy and this recipe is a light take on cheesecake. I toasted slices of angel food cake and layered them with fresh strawberries, blackberries, raspberries and a fluffy cream cheese mousse. The best part is the calorie count….only 170 calories for each parfait!

My friends over at Wolf Gourmet  were kind enough to send one of their gorgeous 4 Slice Toasters my way and I’ve been having a bit too much fun playing around with it. As a mom of 6 kids, I was impressed with how durable and easy to clean this bad boy was.

My last toaster lost the knobs to push down the toast just a few weeks after we bought it. For years, I’ve kept those stupid broken toaster knobs on my window sill so I could easily grab them when I needed to make toast. That won’t be a problem with my new beast!

When I saw that each side of the toaster could be programmed differently, I knew Wolf Gourmet had some insightful Moms on their design team. One kid wants toast for breakfast while another wants a bagel. Now I can toast them at the same time and they each come out perfectly toasted.

The precision shade selector gives you complete control over how light or dark your item comes out of the toaster. You don’t have to commit to a level 4 if what you really need is a level 3.75.

When I was working to create a new recipe to showcase this new countertop beauty of mine, I wanted to step outside of the classic breakfast recipe or the highly popular avocado toasts flooding Pinterest right now. All that kept running through my head for weeks was the question “What can I toast?”

Believe it or not, I came up with A LOT of items I could toast during that brainstorming time 🙂  However, with summer fast approaching, I really wanted to create a healthy dessert option for you all and I worked hard to keep it under 200 calories for a whole parfait.

Now, I know you all like my recipes to be as straight forward and simple as possible, so someone will ask if taking the extra step of toasting the angel food cake is really worth it.  The answer is a big, healthy YOU BETCHA!  When you toast the angel food cake, the sugars caramelize on the outside of the slices and adds a great depth of flavor to your healthy dessert.

Toasted Angel Food Cake Parfaits with Berries

Ingredients

Scale
  • 1 loaf prepared angel food cake, cut into 8 slices
  • 4 ounces low fat cream cheese, room temperature
  • 1 Tb agave nectar
  • 2 Tb plain greek yogurt
  • pinch of salt
  • 3/4 C sugar free Cool Whip
  • 8 large strawberries, cut into quarters
  • 32 blackberries
  • 32 raspberries

Instructions

How to Make Angel Food Cake?

  1. Use a toaster to toast each slice of angel food cake until golden brown. Let them cool completely.
  2. In a medium bowl, beat together the cream cheese, greek yogurt, agave, and salt until smooth. Fold in the Cool Whip then set aside.
  3. Cut one slice of toasted cake into cubes and place it in the bottom of a glass. Repeat with remaining slices. Divide the cheesecake filling between the 8 glasses then top each parfait with one sliced strawberry, 4 blackberries and 4 raspberries. Serve immediately.

Thanks, Carole. I don’t think Cool Whip is a healthy option (check the ingredients), but if you substitute whipping cream, this would be delicious. I would toast thick slices of homemade bread!

Hey Paulanne! Thanks for your feedback and I completely understand your view. Depending on individual dietary needs and weight loss goals, sugar free Cool Whip fills a gap for some sweetness without the fat and calories of whipped cream. If you are looking for a whole food diet, you are correct that this won’t fit that need.
