Ingredients
Tacos

2 Tb olive oil

1 pound boneless, skinless chicken breasts cut into thin strips

1/2 tsp chili powder

1/2 tsp cumin

1/2 tsp chipotle chile powder

1 C sliced red bell pepper

1 C sliced red onion
-
1/4 tsp salt
-
8 (6 inch) tortillas
Salsa
-
3/4 C peeled jicama, julienned
-
3/4 C mango, julienned

1/4 C sliced red onion
-
1 Tb fresh lime juice
-
1 tsp sugar
-
2 tsp chopped cilantro
-
1/4 tsp salt
-
dash black pepper
Instructions

Prepare the salsa by combining all the ingredients in a medium bowl. Set aside

To prepare tacos, heat 1 Tb oil in a large skillet over high heat. Sprinkle chicken evenly with chili powder, cumin and chipotle pepper. Add chicken to hot pan and saute for 3 minutes. Remove from pan.

Add remaining 1 Tb oil to the pan and add pepper and onion. Cook three minutes or until they just begin to tender. Return chicken to the pan and cook for 2 minutes. Sprinkle on the salt.

To serve, heat tortillas according to package directions and add chicken mixture and salsa. Add a generous squeeze of lime juice on top of each taco.
