Ingredients

- 4 sweet potatoes, washed and dried
- 2-3 Tb oil
- 2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 C freshly grated parmesan cheese
Instructions
- Preheat oven to 450 degrees. Cut your sweet potatoes into 1/4 inch pieces, keeping the fries close to the same size for even cooking.
- In a large ziplock bag, combine all the ingredients except for the cheese. Toss them well to evenly cover the fries with the oil and seasonings.
- Place on a large half sheet pan and spread them out so they are in a single layer. Bake for 25-30 minutes until golden brown and tender, turning the fries in the pan after 15-20 minutes. Sprinkle on the parmesan cheese and return to the oven for another 2 minutes. Serve immediately.
