Healthy Valentine Snack

I am the room Mom for my son's Kindergarten class this year and I have tried very hard to come up with healthy options for the snack station at all our parties throughout the year.  I've previously shared my healthy Halloween snack and for Christmas, we made edible snowmen from banana slices, pretzels, mini M&M's, and raisins.
For Valentine's Day, I decided to hit the fresh fruit with my favorite heart shaped cookie cutters.  Unfortunately, February isn't the prime time for fresh fruit so my selection was quite limited.  I still found some fun options.  I had planned to use watermelon, cantaloupe, honeydew and kiwi.  However, once I got to the store, my plan had to be a bit more flexible.  I left with pineapple, watermelon, cheese and strawberries.
The kids LOVED all the selections and couldn't stop talking about how "cute"they all were.  They were definitely a success!  If you decide to try this with your own little ones, find something they love to cut into lots of love-y hearts.  What about some jicama, sweet peppers and cucumbers?  Serve them with their favorite veggie dip tinted with a bit of red food coloring and you've hit gold!

This looks so fun. It even makes me want to eat more fruit, and I don't need convincing. Sherri
