Watermelon Fries with Mango Coconut Dip

An easy summer side dish or appetizer recipe your whole family will love! If you doubt the use of kosher salt, try one fry in the dip without the salt and one fry with a bit of kosher salt. It will make you a believer!

Ingredients

Scale

1 (5-ounce) container coconut Greek yogurt

1/2 cup mashed fresh mango

Zest of 1 lime

2 tablespoons honey

1 seedless watermelon cut into strips

1-2 teaspoons kosher salt

Instructions

  1. Combine yogurt, mango, lime zest, and honey in a medium bowl. Set aside
  2. Use a large chef’s knife to remove the peel from the outside of the watermelon.  Cut into 3/4 inch slices, then take each slice and cut into fries. Sprinkle with kosher salt, toss, and serve with the dip.
