- 2/3 C heavy cream
- 1/2 C light corn syrup
- 1/3 C dark brown sugar
- 1/4 C cocoa powder
- 1/4 tsp salt
- 1 C semi sweet chocolate chips, divided
- 2 Tb butter
- 1 tsp vanilla
Instructions
- In a heavy saucepan, combine the cream, corn syrup, dark brown sugar, cocoa powder, salt and 1/2 C of the chocolate chips. Heat over medium high heat and whisk until it comes to a boil. Reduce heat to low and allow to simmer for 5 minutes.
- Remove from the heat and add the remaining chocolate chips, butter and vanilla. Whisk until smooth and all melted together. Allow to sit about 20 minutes to cool a bit. It will thicken as it cools. Store in an airtight container in the fridge and reheat in the microwave for 30 seconds to a minute until pourable, but thick.
