Ingredients

1/2 cup butter flavored shortening

1/2 cup butter, room temperature

1 cup packed brown sugar

3/4 cup white sugar

1 cup crunchy peanut butter

2 eggs

1 1/2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

1 cup whole oats
Instructions

In a large bowl, beat together the butter, shortening and peanut butter until smooth. Add the two sugars and mix well. Beat in one egg at a time until well blended.

Add the flour, soda, salt and oats. Mix until combined. Scoop onto ungreased cookie sheet and bake at 350 degrees for 9-10 minutes. Do not overbake! Allow to set on the cookie sheet for one minute before removing to cooling rack.
