Oatmeal Peanut Butter Cookies

These peanut butter oatmeal cookies are super chewy and soft!  My kids love these in their school lunches.

  • Yield: 4 dozen 1x

Ingredients

  • 1/2 cup butter flavored shortening
  • 1/2 cup butter, room temperature
  • 1 cup packed brown sugar
  • 3/4 cup white sugar
  • 1 cup crunchy peanut butter
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole oats

Instructions

  1. In a large bowl, beat together the butter, shortening and peanut butter until smooth.  Add the two sugars and mix well.  Beat in one egg at a time until well blended.
  2. Add the flour, soda, salt and oats.  Mix until combined.  Scoop onto ungreased cookie sheet and bake at 350 degrees for 9-10 minutes.  Do not overbake!  Allow to set on the cookie sheet for one minute before removing to cooling rack.
