Grilled Zucchini Parmesan


  • 45 small zucchinis
  • 1 Tb olive oil
  • salt and pepper
  • 4 C of your favorite marinara sauce
  • 1/4 C freshly grated parmesan cheese
  • 1/2 C freshly grated mozzarella cheese


  1. Preheat your grill to high. Cut the ends off your zucchini, then cut it in half length wise. Cut each half into 3 wedges. Once all your zucchini is cut, drizzle over the olive oil and generously salt and pepper them. Toss to coat the spears with the oil and seasoning. Place on the hot grill for 3-4 minutes, then flip over to continue to grill for another 2-3 minutes. Do not over cook your zucchini! You want them to be still firm.
  2. Heat your marinara sauce until hot. Lightly grease your baking dish and line it with the grilled zucchini. Top it with the marinara, then sprinkle on the two different cheeses. Place it under the broiler of your oven until the cheese melts and turns golden brown. Serve immediately.
