Grilled Pineapple with Honey Drizzle

This healthy grilled dessert recipe is a favorite for our summer time BBQ menu.  Grilling the pineapple caramelizes the outside, then the drizzle makes it spectacular.

Ingredients

  • 1 large, ripe pineapple
  • 3 Tb honey or agave nectar
  • 1/4 tsp cinnamon

Instructions

  1. Preheat your grill to medium heat. Use a large knife to remove both ends of your pineapple. Stand it up on one cut end and run the knife under the outside peel of the pineapple in long strips down to the cutting board. Slice the peeled pineapple into rounds then use a small cookie cutter to remove the core from each slice.
  2. In a small dish, combine the honey and cinnamon. Set aside. Grill the pineapple, until golden brown, about 3-5 minutes on each side. Drizzle the honey mixture over the hot pineapple and serve immediately.
