Authentic Indian cucumber raita sauce that provides the cooling on your palate when eating spicy dishes!

Ingredients

Scale

3/4 cup plain whole milk yogurt

1/2 cucumber

1 clove fresh garlic, finely minced

1 inch fresh ginger, peeled and finely minced

2 tablespoons red onion, finely diced

3 tablespoons chopped fresh cilantro

2 tablespoons chopped fresh mint

2 teaspoons fresh lemon juice

1 tablespoon extra virgin olive oil

1/2 teaspoon cumin

1/2 teaspoon coriander

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Serve With:

1 recipe Red Lentil Dahl

1 recipe Garlic Naan 

Instructions

  1. Grate half the cucumber with a box grater and add to a small mixing bowl. 
  2. Add all the remaining ingredients and mix well.
  3. Refrigerate until ready to serve.

Notes

Cucumber raita will keep 5 days in the fridge in an airtight container.
