Easy Cinnamon Muffin Recipe

Better than cinnamon sugar donut holes and ready in 20 minutes!

5 tablespoons butter, room temperature

1/2 cup granulated sugar

1 egg, room temperature

1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon kosher salt

3/4 cup vanilla yogurt

1 teaspoon cinnamon

1 1/2 cups all purpose flour

cinnamon sugar


  1. Heat oven to 350 degrees and lightly grease 24 mini muffin pan with nonstick spray.
  2. In a medium bowl, beat butter until smooth and slowly add the sugar. Beat until light and fluffy.
  3. Add the egg and mix well.
  4. Add the baking powder, soda, and salt. Mix well.
  5. Add yogurt and mix again.
  6. Add the flour and cinnamon. Use a rubber spatula and fold in dry ingredients just until barely combined. Do NOT overmix!
  7. Divide dough into muffin cups and bake for 1o-12 minutes, until tops spring back when gently touched.
  8. Roll muffins in cinnamon sugar while hot then place on wire rack to cool.
