5 tablespoons butter, room temperature
1/2 cup granulated sugar
1 egg, room temperature
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
3/4 cup vanilla yogurt
1 teaspoon cinnamon
1 1/2 cups all purpose flour
cinnamon sugar
Instructions
- Heat oven to 350 degrees and lightly grease 24 mini muffin pan with nonstick spray.
- In a medium bowl, beat butter until smooth and slowly add the sugar. Beat until light and fluffy.
- Add the egg and mix well.
- Add the baking powder, soda, and salt. Mix well.
- Add yogurt and mix again.
- Add the flour and cinnamon. Use a rubber spatula and fold in dry ingredients just until barely combined. Do NOT overmix!
- Divide dough into muffin cups and bake for 1o-12 minutes, until tops spring back when gently touched.
- Roll muffins in cinnamon sugar while hot then place on wire rack to cool.
