This cilantro lime rice recipe is super easy and way better than your favorite version at Chipotle!
1 1/2 C water
1 tsp kosher salt
3 Tb finely chopped cilantro
2 Tb butter
1 Tb fresh lime juice
- Use a strainer to rinse the jasmine rice under the faucet until the water runs clear. Move the rice around with your hands to rinse it well.
- Bring the water and kosher salt to a boil in a medium saucepan, then add the rinsed jasmine rice. Cover then reduce the heat to low. Simmer for 15 minutes.
- Remove the pan from the heat and add the butter. Replace the lid and allow the rice to sit for 5-7 minutes. Use a fork to gently fluff the rice then add the lime juice and cilantro. Gently fold together and serve.
