Cilantro Lime Rice Recipe

This cilantro lime rice recipe is super easy and way better than your favorite version at Chipotle!



1 C white jasmine rice

1 1/2 C water

1 tsp kosher salt

3 Tb finely chopped cilantro

2 Tb butter

1 Tb fresh lime juice


  1. Use a strainer to rinse the jasmine rice under the faucet until the water runs clear.  Move the rice around with your hands to rinse it well.
  2. Bring the water and kosher salt to a boil in a medium saucepan, then add the rinsed jasmine rice. Cover then reduce the heat to low. Simmer for 15 minutes.
  3. Remove the pan from the heat and add the butter.  Replace the lid and allow the rice to sit for 5-7 minutes.  Use a fork to gently fluff the rice then add the lime juice and cilantro.  Gently fold together and serve.
