Chicken Strawberry Salad with Poppyseed Dressing

An easy summer salad recipe loaded with chicken, strawberries, feta, and toasted almonds! Plus, the homemade poppyseed dressing can’t be beat!

Ingredients

1 pound spring mix

1 pound strawberries, sliced

3 cooked chicken breasts, sliced

1/2 cup slivered almonds, toasted

3 oz feta cheese

1 recipe homemade poppyseed dressing 

Instructions

  1. Prepare each plate with spring mix, strawberries, almonds, chicken, and feta. Add dressing and serve immediately. You could also create one large salad to toss together but only dress as much as you will eat because it won’t store after being dressed.

Notes

You will only use about half of the poppyseed dressing so leftovers can be kept in an airtight container for up to 2 weeks in the fridge.
