3 tablespoons all-purpose flour

2 1/4 cup whole or 2% milk

4 tablespoons dijon or spicy brown mustard

6 tablespoons freshly grated parmesan cheese

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1 recipe  Easy Chicken Cordon Bleu

Instructions

  1. In a large skillet, melt the butter over medium high heat. Sprinkle in the flour while whisking to create a paste. Cook for 1 minute until the mixture begins to brown.
  2. While whisking, add the milk and allow the sauce to thicken.
  3. Add the mustard, Parmesan, kosher salt, and pepper.

Notes

You can leave out the mustard but the sauce but try increasing the amount of Parmesan to compensate for the lack of flavor.
