Air Fryer Zucchini

Ingredients

2 medium zucchini cut into 1/4″ pieces (or strips / wedges / chips)

1 tablespoon extra virgin olive oil

2 tablespoon panko bread crumbs

2 tablespoons freshly grated Parmesan cheese

1/4 teaspoon kosher salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/8 teaspoon Italian seasoning

Instructions

  1. Toss together all the ingredients in a large mixing bowl. You want to evenly coat the zucchini in the bread crumbs.
  2. Preheat your air fryer to 400 degrees.
  3. Add the zucchini into the hot basket and cook at 400 degrees for 7-9 minutes until the breading turns golden brown and the zucchini is beginning to soften. The amount of time depends on the power level of your air fryer. See note.

Notes

This recipe was written using a 1500-watt air fryer. If yours is a 1700-watt, you will need less cooking time, while a 13000-watt will require more. Check the bottom of your machine for the sticker that will tell you what power level your machine is.

To make this without any breading, simply leave out the panko breadcrumbs and reduce the oil to 2 teaspoons.

Feel free to use summer squash in place of the zucchini, or a mixture of both together.
