Asparagus is my favorite spring vegetable side dish and I decided to take it to a whole new level of fabulous by wrapping it prosciutto and grilling it until the ham is perfectly crispy. This recipe is a healthy, low carb dish that will floor your dinner guests, yet it is easy enough to make for a weeknight dinner.
A sweet potato is my go-to superfood! The health benefits often deem them the “world’s healthiest food” plus unlike kale, they are super delicious and satisfying! My recipe for these baked french fries only takes a few minutes of prep then, once they are perfectly golden brown and crispy, we are going to take them over the top with some fresh parmesan cheese and seasonings.
Caesar salad is the one salad in our house that absolutely everyone loves. Straight forward romaine lettuce, dressing, cheese and croutons. However, if I’m going to keep my salad that simple then the dressing better be phenomenal and this homemade recipe is definitely the best! Creamy, lots of fresh parmesan cheese and yes, anchovies. Don’t freak out….that is what makes this recipe so much better than the stuff in the jar at the store.
A panini is one of my favorite quick meal ideas for both lunch and dinner. I love this vegetarian panini recipe because not only is it healthy, but it is loaded with Italian flavors, provolone cheese and basil pesto. This sandwich is especially delicious if you happen to have some gorgeous heirloom tomatoes on hand!
