Unfortunately, this recipe will not be making any appearances on our camping trips since I won't have an oven but I might just try it in a dutch oven with coals. This pancake is a major staple in our home, especially when Donny is traveling and I need an easy meal. I have to make two pans to feed our crew because my kids love them so much, especially sprinkled with cinnamon sugar.
German Pancakes
German Pancakes
makes 9 x 13 pan
1/4 C butter
6 eggs
1 C milk
1 C flour
1/4 C sugar
1 tsp vanilla
1 tsp cinnamon
1. Preheat oven to 350 degrees. Melt butter in a glass cake pan in the microwave.
2. In a large bowl, beat together remaining ingredients with a whisk until most of the lumps are gone, about 3 minutes. Allow batter to rest for 5 minutes so any gluten built up will relax.
3. Pour batter into cake pan that has the melted butter in it. Bake for 45 minutes on the middle rack of your oven to allow room for the pancake to puff up.
4. Serve immediately with syrup, cinnamon sugar, powdered sugar or fresh fruit jam.
