I’ve had my first official pregnancy craving and considering stuff like this usually makes me very sick, it was a strange one for me. A few nights ago, all I wanted were Buffalo chicken wings with some blue cheese dressing to dip them in. I think in my whole lifetime, I’ve only eaten chicken wings 5 times so I have no idea where it came from!
In a desire to try to eat something a bit healthier than fried chicken wings, I created these wraps and boy were they delicious and easy. My kids really loved them as well, which surprised me with the blue cheese dressing. I could have gone for a bit spicier buffalo sauce but kept it on the milder side for my kids. If you want it spicier, substitute more hot sauce for the tomato sauce.
Buffalo Chicken Wraps
3 boneless, skinless chicken breasts
1/2 C tomato sauce
3 T hot sauce (if you want it spicier, substitute more hot sauce for tomato sauce)
1 1/2 T butter, melted
1 T worcestershire sauce
sliced green onion
packaged coleslaw mix
blue cheese dressing
1. Heat large skillet with a couple tablespoons of oil over high heat. Chop chicken breasts into bite size pieces and season well with salt and pepper. Cook chicken in hot pan until no longer pink.
2. Mix together in a small bowl tomato sauce, hot sauce, and worcestershire. Pour over cooked chicken and allow chicken to simmer in the sauce for a few minutes.
3. Mix together some coleslaw mix and dressing together in a medium bowl. Warm your tortillas and assemble wraps with chicken, slaw, and green onions. Serve a bit of the warm buffalo sauce on the side for dipping.
